Its Origins
Gavi is one of Italy’s most celebrated whites, from the hills of southeastern Piedmont, close to Liguria. The wine takes its name from the medieval town of Gavi, which is towered over by a seventeenth-century fortress whose brooding outline is a remarkable contrast against the gently rolling vineyards surrounding it, sloping down towards the Lemme River. The Castellari Bergaglio estate is located right in the middle of this timeless landscape of natural beauty and tranquility with red clay soil, rich in iron, 200 meters (984 feet) above sea level. The estate has 30 acres (12 hectares) under vine and was founded in 1890. It is now in its fourth generation and is family run in the finest Italian fashion.

"This vineyard is only a couple of hundred metres away from Rolona, but on completely different, terra rossa soils consisting of iron-rich clay. Both wines are vinified in exactly the same way, in stainless steel and with selected, neutral yeast. This is a big, rich Gavi, the warmth of the vineyard's red soils coming through in notes of red apple and marzipan and an unctuous texture. "The Vineyards are in the hills in the municipality of Tassarolo. It is a fine and delicate wine... with floral (hawthorn and lily of the valley) and fruity (banana) aromas, accompanied by citrus, hay, and mint notes.It has a greatly balanced palate with a finish full of fruity notes and well balanced by a pleasant freshness: the classic wine that would be good on the table every day. The vineyards, also owned, are located in the municipality of Tassarolo and are so named because of a brick kiln that once existed in their place. This aspect also explains the mainly clayey type of soil. The grapes are immediately transferred to the winery, where they undergo a soft pressing to extract only the best part from the berries. Fermentation, at a controlled temperature, 18-20° C, to maintain the typical richness of Cortese di Gavi's aromas), goes on very slowly, even for 20 days. Bottling is done in February and March to allow the wine a minimum of bottle aging before release. It is delightful from the spring following the harvest but reaches its greatest enjoyment after a few months of bottle aging. It does not fear a few years in the bottle."
