Sparkling

Sparkling wine is a classic celebration, but fizz plus freshness makes a great any-day aperitif. Most sparkling wines are made from white grapes and follow two archetypes. The most famous is Champagne - called ‘Methode Traditionelle’ if made elsewhere - in which a second fermentation in bottle produces carbon dioxide bubbles and yeasty complexity. The other is Italian Prosecco, in which drink-young wines are pressurised before bottling to add fizz to more juicy fruit flavours. Sparklers can also be sweet like Moscato d’Asti, or red like Italy’s Lambrusco or Australia’s richer sparkling Shiraz.
