As the legendary ex head winemaker at Sacred Hill, Tony Bish is an acknowledged Chardonnay guru. Expert barrel and lees work make this is a gorgeously sappy, creamy and nicely oaked Hawkes Bay Chardonnay for anytime enjoyment. Its Origins

Tony Bish is a legend of New Zealand winemaking who spent decades making such iconic wines as Sacred Hill's Rifleman's Chardonnay. Now he is channeling his Chardonnay expertise into his own labels, which he produces in a stylish urban winery he has set up in Napier. Much of his wine is aimed at delivering classy examples of the the rich and creamy, 'old school' style of Chardonnay. But Tony's incredible touch and experience ensures that each wine is balanced and refined — even with all their big, bold appeal. Meanwhile, Tony's ongoing experimentation in style and technique is producing results such as his deliciously un-oaked "Golden Egg" Chardonnay, and his super premium "Zen" Chardonnay, which is made in an incredible egg-shaped oak vessel.

What The Critics Say

94/100 Sam Kim Wine Orbit

It's instantly appealing on the nose with grilled stone fruit, mango, French vanilla and roasted hazelnut characters. The palate delivers excellent weight and roundness, gorgeously complemented by creamy texture and fine acidity. Richly styled and delectably expressed with a lengthy satisfying finish. At its best: now to 2028

92/100 Cameron Douglas MS

"Bold and expressive bouquet filled with a power pack of yellow peaches and ripe apple, layers of vanilla spice and burnt butter, some extra wood spices and a raw brown sugar note. On the palate lots of cream-fresh and peach flavours, whipped butter wrapped in a silky cream texture. Balanced and ready, tasty and delicious. Best drinking from 2023 through 2026."

4.5 Stars Michael Cooper (2021 vintage)

"Described as ‘all curves and lusciousness with exceptional sass’, Tony Bish Fat and Sassy Hawke's Bay Chardonnay 2021 (****1/2) is a high impact, upfront style, made with use of barrel fermentation and a softening malolactic fermentation. Bright, light yellow/green, it is full-bodied, with generous, ripe, peachy, slightly toasty flavours, showing considerable complexity, balanced acidity, a creamy texture, and strong drink-young appeal."
