Its Origins
Gavi is one of Italy’s most celebrated whites, from the hills of southeastern Piedmont, close to Liguria. The wine takes its name from the medieval town of Gavi, which is towered over by a seventeenth-century fortress whose brooding outline is a remarkable contrast against the gently rolling vineyards surrounding it, sloping down towards the Lemme River. The Castellari Bergaglio estate is located right in the middle of this timeless landscape of natural beauty and tranquility with red clay soil, rich in iron, 200 meters (984 feet) above sea level. The estate has 30 acres (12 hectares) under vine and was founded in 1890. It is now in its fourth generation and is family run in the finest Italian fashion.

"Selection of grapes from old vines, dried for 40 days. Fermentation starts in stainless steel; halfway through the wine is racked off to barriques where it finishes the fermentation and goes through malolactic conversion. It is aged on the fine lees for eight months, bottled and then aged a further six years in bottle. Released spring 2022. Deep straw yellow. Hazelnuts and savoury, meaty minerally hints as well as oak underneath a layer of yellow fruit. Concentrated, rich fruit with hints of hazelnuts and salty notes intertwined with lemon fruit. The waxy, petrolly note lifts with aeration. Amazing length and balance."

"We named this wine "Pilin" to honor one of our ancestors. Pilin was the nickname by which he was known in Gavi. He passed on to the next generations the desire to work on the enhancement of our land through the production of wine. That is why we proudly named our most challenging wine after him. We select grapes for Pilin's production within all the winery's vineyards. With almost maniacal care and attention, we operate the selection of the best bunches, the healthiest and ripest ones, to place them in small wooden boxes where they undergo a light drying process of 30-40 days. This operation gives the wine the characteristics suitable for vinification and aging in barriques. Since we began its production in 1984, Pilin has become more and more renowned."
