“Verdicchio is one of the joys of Italian oenology that rarely gets the respect it deserves, and few producers do it better than Bisci.” – The Wine Advocate. High in the Apennine mountains of the Marche, Bisci is certainly one of the estates where the qualities of Verdicchio di Matelica are most valued. The vineyards were totally replanted starting from the seventies and are located at an altitude of 300-350 meters above sea level with southern exposure. The alternation of sunny days and of fresh and dry nights gives the grapes character and an extremely fine fragrance.Our Matelica Verdicchio DOC wine is obtained entirely from Verdicchio grapes. The grapes are harvested by hand and transported immediately to the cellar where, after an initial soft pressing, they are pressed directly with horizontal presses to separate the juice from the skins. The must is lowered in temperature and then sent to fermentation at a temperature that never exceeds 20°C. All winery operations are aimed at enhancing the best features of the vine through the utmost respect of the grapes. Verdicchio of Matelica is a vine that requires extraordinary attention in the processing because of the sensitivity of their skin, but then gives musts and wines with texture and enviable body supported by high acidity and alcoholic richness that allow a remarkable longevity - quite rare for a white wine.
