A skin-fermented example of Tony Bish's extreme Chardonnay expertise. This deliciously dry but complex white was fermented on skins, then drained off them to his famous egg vessel. (So it is skin-fermented, but clearer than an orange wine). Reaching maturity in the egg, the curves and micro-currents work to increase the wine's contact with its yeast lees, adding weight and roundness to the complexity and texture of the skin-derived elements. New and tasty.

Its Origins

From the man at the helm of the Sacred Hill Wines. Tony has now started his own label and he will be producing only Chardonnay. The wine is clearly aimed at the 'old school' style of Chardonnay, exemplified best by his top Skeetfield label. But Tony's expertise allows the wines to remain elegant and refined, even while they are while big, bold and buttery. Experimentation in style and technique is meanwhile producing results in new styles such as his remakable, un-oaked Golden Egg Chardonnay.

"A complex, intriguing and enticing bouquet of Chardonnay. Takes more than a few sniffs to get all the content and story of this example - aromas of chalk and texture, red apple skin and dry citrus peel, some floral moments and a core of energy. Dry on the palate with a core of texture and skin contact derived flavours - hard to describe so I'll just suggest you try the wine and decide for yourself - suffice to say complex and intriguing, detailed and lengthy. Drink now and through 2022+."

"I did this in part out of frustration in trying to find enjoyable 'orange' wines, and consequently decided to set myself the challenge of making a skin ferment wine that would be fault-free and delicious, but different."" It was fermented on the skins before being matured in a concrete egg. Skin contact has concentrated flavours, which is a good thing, but I'm less sure about the amplified tannins, which gives the wine a coarse but interesting texture. It's a wine that needs food.
