Its Origins

Tony Bish is a legend of New Zealand winemaking who spent decades making such iconic wines as Sacred Hill's Rifleman's Chardonnay. Now he is channeling his Chardonnay expertise into his own labels, which he produces in a stylish urban winery he has set up in Napier. Much of his wine is aimed at delivering classy examples of the the rich and creamy, 'old school' style of Chardonnay. But Tony's incredible touch and experience ensures that each wine is balanced and refined — even with all their big, bold appeal. Meanwhile, Tony's ongoing experimentation in style and technique is producing results such as his deliciously un-oaked "Golden Egg" Chardonnay, and his super premium "Zen" Chardonnay, which is made in an incredible egg-shaped oak vessel.

"Brilliant, bright, moderate yellow-gold, slightly lighter on the rim. The nose is voluminous and refined, an elegant bouquet of lemon rind, peach and apricot, entwine with toasty barrels and spice, and custard tarts. Medium-full bodied, calm and integrated flavours of crunchy lemon sherbet, lemon rind, and stonefruit interweave barrel spices, toasted hazelnuts, along with baked custard tarts. The flavours are well-proportioned and refined, multi-layered with punches. The smooth and seamless palate flows with chalky textured mineral, with the perfect amount of acidity and great energy, reminded me of Chassagne Montrachet's fine drops. This is a harmonious, elegant Chardonnay with all the trimmings in perfect proportions. Match with pan-seared foie gras and grilled langoustine over the next 8-10 years. Dry-farmed Mendoza clone handpicked, whole bunch pressed. 100% barrel-fermented to 13.5% alc, 60% new Taransaud French oak. 100% MLF, battonage, on lees for 12 months. 20/20 pts (100 pts) March 2021 RRP $60."

"Fantastic bouquet with intensity, power, ripeness and a core of style. Aromas of grapefruit and gun flint, peach and preserved lemon, apple and quince. The scents of oak are distinctive too with spice and delicate toastiness as well as a natural oak sweetness and nutty tension. On the palate - complex, layered and delicious. Flavours of fruit and spices reflect the bouquet, but this wine is all about texture too with tannins and acidity layering in a textured mouthfeel alongside the core of fruits, mineral stony clay flavours and flinty tension.
