After gaining experience in Alsace and Burgundy, Bernard Fouquet established his own winery in 1982 in the Loire, focussed on the Chenin Blanc grape. He soon created a trial and error knowledge of his terroir and by the mid-late 1990s, when Vouvray had a series of stellar vintages, Fouquet wines were among the foremost in the world market for the price. With an emphasis on purity and use of stainless steel, Fouquet aims to capture his respective terroir characteristic in each style: mainly calcareous clay in his dry and dessert wines, mainly flint/silica in his demi-sec and sparkling wines. Today Fouquet’s labels remain inexpensive but are considered to be among Vouvray’s best at any price.

"Made from Chenin Blanc, this wine reveals some residual sugar, but its natural acidity balances out the sugar, resulting in a fruity tasting, but dry white. An elegant, wonderfully extracted wine, it offers up notes of Mandarin oranges, honeysuckle, citrus oil and a hint of chalky wet rocks in the background. The vineyard is planted in flint and limestone soils, and the wine is fermented with indigenous yeasts. It possesses 8.77 grams per liter of residual sugar and 12.8% alcohol.
