From the man at the helm of the Sacred Hill Wines. Tony has now started his own label and he will be producing only Chardonnay. The Chardonnay-only project is run with his wife Karryn and photographer friend Richard Brimer. The wine is clearly aimed at the 'old school' style of Chardonnay, exemplified best by his top Skeetfield label. But Tony's expertise allows the wines to remain elegant and refined, even while they are while big, bold and buttery. Experimentation in style and technique is meanwhile producing results in new styles such as his remakable, un-oaked Golden Egg Chardonnay.
What The Critics Say

"Bright straw-yellow colour with light golden hues, paler on edge. The nose is rich and full with well-concentrated and deeply packed aromas of ripe yellow stonefruit and citrus fruit complexed by an amalgam of mealy and nutty oak, creamy barrel-ferment elements, oxidative detail, unfolding some lemon-curd and buttery MLF elements. The nose retains a fresh minerally edge. Medium-full bodied, the palate is richly packed with concentrated and layered flavours of ripe yellow stonefruits melded with flavours of creamy barrel-ferment and nutty lees and oak elements, and lemon-curd MLF and subtle oxidative complexities. The palate is multi-dimensional, revealing complex detail as it flows. This has an underlying power with fine, lacy acidity providing energy and tension. The flavours flow along a very fine-textured line, leading to a very long and sustained, deeply concentrated and complex-flavoured finish. This is a complex, multi-dimensional, layered Chardonnay with stonefruit, mealy, nutty lees and oak flavours along with barrel-ferment and MLF richness on a fine-textured, fresh and youthful palate. It will develop well over the next 5+ years. Match with roasted and grilled white meat dishes. Hand-picked Mendoza clone fruit from the ‘Skeetfield’ vineyard, Ohiti, fully barrel fermented by indigenous yeasts with high solids to 13.0% alc., the wine aged 12 months on lees in 60% new Taransaud French oak with 100% MLF. 19.5/20 May 2017 RRP $59.95." "Rich, mouth-filling chardonnay with peach and tree fruit, and a strong nutty yeast lees and spicy oak influence. Weighty, textural wine in a pleasing flavoursome style. The taste and texture of this wine endorses the old vine, dry farmed, Mendoza chardonnay statement on the back label."
5 Stars Michael Cooper
"The impressive 2016 vintage (5*) is based on mature, Mendoza-clone vines at Ohiti. Hand-harvested, it was fermented in French oak barriques (60 per cent new), lees-aged for a year, and given a full, softening malolactic fermentation. A very 'complete' wine, it is delicious in its youth, with a fragrant, complex bouquet. Weighty and rounded, it has highly concentrated stonefruit flavours, a real sense of depth through the palate, and a faintly buttery, finely textured, very harmonious finish. Drink now or cellar."
