From the man at the helm of the Sacred Hill Wines. Tony has now started his own label and he will be producing only Chardonnay. The Chardonnay-only project is run with his wife Karryn and photographer friend Richard Brimer. The wine is clearly aimed at the 'old school' style of Chardonnay - big, bold and buttery, but Tony has added his elegance to the wine also.

"Bright yellow colour with some depth and light golden hues, paler edged. This has a full, broad nose of refreshing and bright aromas of ripe yellow stonefruits and citrus fruits along with an edge of creamy and nutty barrel-ferment and spicy oak notes, and subtle lemon-curd and buttery MLF detail. The aromas build in intensity and depth with aeation. Medium-bodied, the palate is fresh, vibrant and bright, with elegantly presented flavours of citrus fruits melded with creamy barrel-ferment and nutty, spicy oak. The mouthfeel is enriched by integrated layers of lemon-cud and buttery MLF nuances. The palate ha an underlying freshness with acid poise, and the wine flows along a fine-textured, dry line leading to a sustained finish with toasty oak. This is a fresh, bright, elegant Chardonnay with lively citrussy fruit enriched by layers of creamy, nutty and buttery flavours, finishing fine and dry. Match with roasted and grilled poultry and pork dishes over the next 4 years. 80% clone 15 from Bridge Pa Triangle, vines 10 y.o., and 20% Mendoza clone fruit from the Upper Dartmoor, vines 15 y.o.. The wine is 50% barrel-fermented and 50% tank-fermented with oak staves to 13.0% alc. After 6 months maturation, the barrel portion is placed in tank and the tank portion placed in barrel. The wine spends 11 months in barrel with 20% new equivalence, and undergoes batonnage and full MLF. 18.0+/20"
